Refried Bean Quesadillas Recipe
Ingredients
- 8 small flour or corn tortillas
- 2 cups refried beans (canned or homemade)
- 1 cup shredded cheese (cheddar, Monterey Jack, or a blend)
- 1/2 cup diced onions
- 1/2 cup chopped bell peppers (optional)
- 1 tablespoon olive oil
- 1 teaspoon ground cumin
- 1 teaspoon garlic powder
- Salt and pepper to taste
- Sour cream, salsa, or guacamole (for serving)
Instructions
- Prepare the Filling:
- In a large skillet, heat the olive oil over medium heat.
- Add diced onions and bell peppers (if using) to the skillet. Sauté for about 3-4 minutes, or until the vegetables are soft.
- Stir in the refried beans, ground cumin, garlic powder, salt, and pepper. Cook for an additional 2-3 minutes, stirring until the mixture is heated through.
- Assemble the Quesadillas:
- Place a tortilla on a clean surface. Spread a generous amount of the refried bean mixture on half of the tortilla.
- Sprinkle shredded cheese over the bean mixture.
- Fold the tortilla in half to cover the filling.
- Cook the Quesadillas:
- Wipe out the skillet and heat it over medium-high heat. If necessary, add a little more olive oil.
- Carefully place the folded quesadilla in the skillet. Cook for about 2-3 minutes on one side, or until golden brown and crispy.
- Flip the quesadilla and cook for another 2-3 minutes on the other side until the cheese is melted and the tortilla is crispy.
- Serve:
- Remove the quesadilla from the skillet and let it cool for a minute before cutting it into wedges.
- Serve with sour cream, salsa, or guacamole.
