Refried Bean Quesadillas Recipe

Ingredients

  • 8 small flour or corn tortillas
  • 2 cups refried beans (canned or homemade)
  • 1 cup shredded cheese (cheddar, Monterey Jack, or a blend)
  • 1/2 cup diced onions
  • 1/2 cup chopped bell peppers (optional)
  • 1 tablespoon olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Sour cream, salsa, or guacamole (for serving)

Instructions

  1. Prepare the Filling:
    • In a large skillet, heat the olive oil over medium heat.
    • Add diced onions and bell peppers (if using) to the skillet. Sauté for about 3-4 minutes, or until the vegetables are soft.
    • Stir in the refried beans, ground cumin, garlic powder, salt, and pepper. Cook for an additional 2-3 minutes, stirring until the mixture is heated through.
  2. Assemble the Quesadillas:
    • Place a tortilla on a clean surface. Spread a generous amount of the refried bean mixture on half of the tortilla.
    • Sprinkle shredded cheese over the bean mixture.
    • Fold the tortilla in half to cover the filling.
  3. Cook the Quesadillas:
    • Wipe out the skillet and heat it over medium-high heat. If necessary, add a little more olive oil.
    • Carefully place the folded quesadilla in the skillet. Cook for about 2-3 minutes on one side, or until golden brown and crispy.
    • Flip the quesadilla and cook for another 2-3 minutes on the other side until the cheese is melted and the tortilla is crispy.
  4. Serve:
    • Remove the quesadilla from the skillet and let it cool for a minute before cutting it into wedges.
    • Serve with sour cream, salsa, or guacamole.
